Thanks to Benedictine University Dietetic Intern Heather Plizga for sharing this recipe. Heather says: “What kid doesn’t love mashed potatoes? What about green smashed potatoes? This cheesy delight is a great way to give your child their first neutral exposure to spinach incorporated into an already loved food item.”
Vegetable cooking spray
12 ounces fresh spinach, coarsely chopped
1 clove garlic, minced
2 pound Yukon Gold potatoes, chopped (or other potatoes)
1/4 cup butter
2/3 cup milk, warmed
1 cup Swiss cheese
salt and pepper, to taste
Lightly coat a large skillet with cooking spray. Add spinach in batches , along with garlic, over medium-high heat until it wilts but does not lose its bright green color. Finish cooking and set aside.
Cook potatoes in a pot with boiling water until soft throughout. Drain potatoes and return to pot. Using a potato masher, mash the potatoes only partially to give “smashed” quality. Add in butter milk, Swiss cheese and spinach until combined. Season with salt and pepper to taste
Serves 4.
