“Kids Corner” Strawberry Mango Salad

Thanks to Benedictine University Dietetic Intern Jamie Kuo for sharing this recipe. It’s a great way to make simple salad greens more appealing to kids young and old!

2 tablespoons and 2 teaspoons sugar
1/4 cup canola oil
1/4 teaspoon salt
1 tablespoon and 1 teaspoon balsamic vinegar
2 2/3 cups mixed salad greens
2/3 cup sweetened dried cranberries
2 1/2 ounces fresh strawberries, quartered
1/3 mango, peeled, seeded and cubed
2 tablespoons and 2 teaspoons chopped onion or scallions
1/3 cup slivered almonds

Place the sugar, oil, salt, and vinegar in a jar with a lid. Seal jar, and shake vigorously to mix. In a large bowl, mix salad greens, sweetened dried cranberries, strawberries, mango, and onion. To serve, toss with dressing and sprinkle with almonds.

Serves 4.
