Scrub raw beets or turnips. Grate or cut into thin matchsticks. Toss with chopped garlic scapes to taste.
Drizzle with a favorite home made or bottled vinaigrette dressing and toss. Add toasted nuts, a sharp cheese (blue, Parmesan, or feta), and/or a sprinkling of fresh thyme leaves.
Serve on top of lettuces mixed with the greens from the beets or turnips.
