3 large kohlrabi
1 – 2 carrots (enough to give the slaw some color)
1/4 cup sugar
1 tablespoon cider vinegar
1/4 – 1/2 cup mayonnaise
1 diced apple
ground pepper, to taste
Shred kohlrabi and carrots and put in a bowl. Sprinkle with sugar and let sit at room temperature for one hour. (Sugar can be altered to suit your taste). Add vinegar, mayonnaise and apple, and mix. If you desire a creamier mixture, you can add additional mayonnaise. Season with pepper. Serve immediately or chill.
