Ratatouille is a classic vegetable stew from Provence, France, which can be eaten hot or cold, as an appetizer, main course or side dish. Tomatoes, zucchini, eggplant, bell peppers, garlic and onions are the traditional ingredients, along with herbs for flavoring. Use whatever amounts of the ingredients that you have available and that suits your taste.

Sauté chopped onion and garlic in olive oil. Add coarsely chopped bell pepper and eggplant and cook until eggplant just starts to become tender. Add coarsely chopped summer squash and cook until fork-tender. Add chopped tomatoes, season with choice of herbs and then cover and cook over low heat until tomatoes are heated through or until stew is of desired consistency. Season with salt and pepper.
