This speedy recipe is a favorite of CSA member Carlotta Caracci, thanks for sharing!
1 head broccoli, washed and roughly chopped
3 tablespoons olive oil, separated
1/2 teaspoon sea salt
crushed red pepper to taste
1/2 teaspoon coriander
1 clove garlic, chopped
1/4 cup Parmesan cheese
To one head of broccoli, toss with 2 tablespoons olive oil, sea salt, crushed red pepper, coriander, and clove of chopped garlic. Â Roast in oven at 400 degrees for 15 minutes, turning once half way through. Â After removing from oven, I then toss with the additional tablespoon of olive oil and Parmesan cheese.
Serves 4 as a side dish.
