Cucumbers are a summer fruit, and are most commonly found in their long green variety. Cucumbers can also be round and yellow! They are thought to have been originally cultivated in India.

To Store:

Cucumbers must be stored in the refrigerator, and will keep for up to 10 days if kept whole. Sliced cucumbers will deteriorate quickly.

Preparation:

Wash the outside of the cucumber. You may peel or leave the skin on depending on your preference. If the texture of the seeds is unpleasant to you, they may be scooped out. Cucumbers are excellent raw in salads or part of a vegetable platter. They can also be made into chilled soups, added to dips, and make a fresh addition to a green smoothie!
