Strawberry Kale Salad

multiple leaves of kale

1 cup of fresh kale-chopped
1/4 cup of fresh strawberries-halved
1 ounce of goat cheese
1 handful of either candied or fresh walnuts-chopped (substitute sunflower seeds if allergic to nuts)
1 or 2 Tablespoons of grape seed oil
2 Tablespoons of balsamic vinegar

Wash the kale and pat dry.  Stack the leaves and cut widthwise into 1/2 inch slices and discard the thick stems.  Place the kale is a bowl, add the strawberries, goat cheese, and either walnuts or sunflower seeds.  Drizzle with the grapeseed oil and balsamic vinegar (add more/less as needed).  Toss and serve immediately.

Serves 1-2
