2 cups sugar snap peas
1/2 coup thinly sliced red onion
2 cups thinly sliced bok choy
3 tablespoons olive oil
4 tablespoons lime juice
1 teaspoon sugar
1 garlic clove
1/2 teaspoon salt
freshly ground black pepper
Combine vegetables. Whisk together oil, lime juice, sugar and garlic. Pour dressing over vegetables, season with salt and pepper and toss well. Let stand 30 minutes before serving.
