2 pounds cut up potatoes
1 tablespoon olive oil
1 1/4 teaspoons salt
1/2 cup chopped bell pepper
3/4 teaspoon paprika
1/2 teaspoon finely minced garlic
1/8 to 1/4 teaspoon ground cayenne pepper
1/4 teaspoon thyme
Combine potatoes and olive oil in a 13x9x2-inch baking pan. Sprinkle with seasonings and toss to coat well. Roast at 450 degrees F for about 35 minutes, stirring 2 to 3 times.
Serves 4.
