“Kids Corner” Sloppy Salsa Joes

Fresh squash and other veggies are added to a spicy salsa-meat mixture, adding texture and extra nutrients to an old favorite. Your kids won’t even notice!

1 pound lean ground beef
1/2 cup chopped onion
2 cloves minced garlic
2 cups chopped summer squash
1 cup sliced fresh mushrooms
3/4 cup chopped green bell pepper
1 16-ounce jar salsa
1 teaspoon dried basil, crushed
1/2 teaspoon dried parsley flakes
1/2 teaspoon dried rosemary
6 to 8 Kaiser rolls, split and toasted

In a large skillet cook ground beef, onion, and garlic over medium-high heat until meat is brown. Drain off fat. Stir in squash, mushrooms and green pepper. Cook, covered, over low heat for 5 to 7 minutes or until vegetables are tender. Stir in salsa, basil, parsley and rosemary. Bring to boiling; reduce heat. Simmer, uncovered, about 10 minutes or until most of the liquid has evaporated. Serve on toasted rolls.

Serves 6 to 8.
